Cette r\u00e9gion situ\u00e9e \u00e0 l\u2019extr\u00eame sud de la p\u00e9ninsule est r\u00e9put\u00e9e pour le vin Cir\u00f2, l\u2019amer Vecchio Amaro del Capo produit avec des herbes calabraises, la saucisse de porc &lsquo;Nduja, le Pecorino calabrais, la bergamote et le poisson.<\/strong><\/p>\n<p><a href=\"https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-2779\" src=\"https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1.jpg\" alt=\"\" width=\"1200\" height=\"799\" srcset=\"https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1.jpg 1000w, https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1-600x400.jpg 600w, https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1-300x200.jpg 300w, https:\/\/www.suessemjetaime.lu\/wp-content\/uploads\/2019\/03\/1000_plat0_1-768x511.jpg 768w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/a><\/p>\n<p>Si vous voulez bien pr\u00e9parer le terrain pour un repas \u00e0 l\u2019italienne, il faut servir des <strong>antipasti\u00a0<\/strong>(entr\u00e9e froide), e.a. des olives, du fromage, de la charcuterie, des l\u00e9gumes grill\u00e9s et des bruschettas.<\/p>\n<p>En s\u2019inspirant de la cuisine de la grand-m\u00e8re, on pr\u00e9pare des <strong>p\u00e2tes au four typiquement calabraises<\/strong> comme primo piatto(premier plat). On a besoin des ingr\u00e9dients suivants\u00a0:<\/p>\n<ul>\n<li>1 kg de p\u00e2tes Tortiglioni<\/li>\n<li>4 bouteilles de sauce tomate Cirio (+\/- 700 g)<\/li>\n<li>500 g d\u2019hach\u00e9 mixte<\/li>\n<li>Soppressata (saucisse)<\/li>\n<li>Jambon cuit<\/li>\n<li>Parmesan<\/li>\n<li>Provolone (fromage)<\/li>\n<li>2 \u0153ufs<\/li>\n<li>6 \u0153ufs durs<\/li>\n<li>Huile d\u2019olive<\/li>\n<li>1 oignon<\/li>\n<li>Ail coup\u00e9 fin<\/li>\n<li>Persil<\/li>\n<li>Basilique<\/li>\n<li>Pain r\u00e2p\u00e9<\/li>\n<li>Sucre<\/li>\n<li>Sel<\/li>\n<li>Poivre (aussi du poivre noir)<\/li>\n<\/ul>\n<p>Bien m\u00e9langer 500 g d\u2019hach\u00e9 mixte, du pain r\u00e2p\u00e9, 2 \u0153ufs, du persil, de l\u2019ail coup\u00e9 fin, du sel, du poivre, du parmesan et de l\u2019huile d\u2019olive avec les mains. Si c\u2019est trop dur, ajouter un peu d\u2019eau chaude (go\u00fbter\u00a0!). Faire des petites boulettes qu\u2019on fait frire dans l\u2019huile d\u2019olive. Ajouter un peu de sucre (ou une carotte) \u00e0 cause de l\u2019acidit\u00e9. Faire cuire \u00e0 feu doux pendant au moins 2 heures. La sauce doit \u00eatre semi-liquide. Ajouter du sel. Faire cuire les p\u00e2tes Tortiglioni al dente. Couper saucisse, \u0153ufs durs, provolone et jambon cuit en petits morceaux. Mettre un peu de sauce dans le fond d\u2019un grand plat \u00e0 four et placer les p\u00e2tes garnies de sauce au-dessus.<\/p>\n<p>Couvrir les p\u00e2tes de sauce avant d\u2019ajouter saucisse, \u0153ufs durs, provolone, jambon cuit et boulettes de viande. Couvrir de sauce tomate et de parmesan. R\u00e9p\u00e9ter la proc\u00e9dure et couvrir de parmesan. On a besoin des ingr\u00e9dients suivants\u00a0:<\/p>\n<ul>\n<li>\u00c9paule d\u2019agneau<\/li>\n<li>6 tomates ou \u00bd bo\u00eete de tomates pel\u00e9es<\/li>\n<li>2 gros oignons<\/li>\n<li>Vin blanc<\/li>\n<li>Huile d\u2019olive<\/li>\n<li>Sauge<\/li>\n<li>Romarin<\/li>\n<li>Sel<\/li>\n<li>Poivre<\/li>\n<\/ul>\n<p>Pr\u00e9parer le jour avant : laver la viande, mariner avec de la sauge, du romarin et \u00bc de vin blanc. Laisser au bain toute la nuit. Le lendemain, \u00e9goutter la viande et faire s\u00e9cher dans une po\u00eale. Faire frire 2 gros oignons et ajouter les morceaux de viande ainsi que la pr\u00e9paration. Ajouter 6 tomates (ou des \u00bd tomates pel\u00e9es) avec du sel et du poivre. Faire cuire lentement pendant environ 1 heure et, si n\u00e9cessaire, ajouter un peu d\u2019eau. On a besoin des ingr\u00e9dients suivants\u00a0:<\/p>\n<ul>\n<li>1 kg de farine<\/li>\n<li>300 g de sucre<\/li>\n<li>200 g de beurre<\/li>\n<li>5 \u0153ufs<\/li>\n<li>2 jaunes d\u2019\u0153uf<\/li>\n<li>Zestes de 2 citrons r\u00e2p\u00e9s<\/li>\n<li>2 sachets de levure chimique<\/li>\n<li>Perles sucr\u00e9es color\u00e9es<\/li>\n<li>Sel<\/li>\n<li>1 petit verre de liqueur anis\u00e9e (facultatif)<\/li>\n<\/ul>\n<p>M\u00e9langer la farine, le sucre et la levure dans un bol. Ajouter le beurre mou coup\u00e9 en petits morceaux. Travailler cette p\u00e2te \u00e0 la main afin de la rendre molle. Rouler la p\u00e2te \u00e0 1,5 cm d\u2019\u00e9paisseur. D\u00e9couper des formes typiques\u00a0comme des c\u0153urs, des tresses ou des nids. Mettre un \u0153uf cru entier (avec coquille) sur chaque petit g\u00e2teau et le fixer avec des tranches de p\u00e2te. R\u00e9pandre les jaunes d\u2019\u0153ufs et les perles sucr\u00e9es color\u00e9es sur les g\u00e2teaux.<\/p>\n<p>Mettre au four \u00e0 180\u00b0 pendant environ 20 minutes.
